Kevin Malligan, 24, was holidaying in Indonesia ahead of the birth of his second child when the scooter he was a passenger on hit a pole.
He suffered a brain bleed as well as skull and neck fractures after being launched onto the road.
Mr Malligan's wife Leah, who is due to give birth in February, rushed to his side after he was placed on life support in a Nusa Dua hospital.
Despite fundraising efforts and a successful campaign to bring him back to Australia, Mr Malligan's family confirmed his injuries were catastrophic.
An update from the 24-year-old's mother-in-law Jodie French said the whole family gathered to say their goodbyes before he died.
"Our last hours with our son in law Kevin were this morning as we all said our goodbyes. We had to go through a traumatic time that no wife, father, mother, dad and family should have to go through," she said.
"Leah and his dad made the beautiful generous choice to donate his internal organs. We hope that all these organs are going to help and save as many people as possible to live a healthier life for themselves."
Ms French said her daughter Leah was "grateful" for the support from friends, family and complete strangers in recent weeks.
"Leah is overwhelmed by the support to bring Kevin back home and to have the opportunity to farewell her beloved husband and father to Ivy and her soon to be bub," she said.
More than $123,000 was received from nearly 1500 donors who joined the effort to bring Mr Malligan back to Australian shores.
"We have kids of our own and it's unimaginable what you're going through," one well-wisher wrote.
"Wish you all the best. We are praying for you."
